Energy Boosting Protein Smoothie
...With this Vanilla Chia Smoothie.Chia seeds are an amazing superfood. Chia seeds deliver a massive amount of nutrients with very few calories. They are loaded with antioxidants, contain lots of fiber, are a high quality protein, are high in omega-3 fatty acids, and so much more. Who knew such a small seed could contain such a big punch. You can add chia seeds to smoothies, like I did here, to salads, dressings or even pastas.
Chia seeds are also hydrophilic. They can absorb up to 12 times their weight in liquid when soaked. You can go ahead and soak your seeds in the almond milk so the seeds develop a mucilaginous gel-like coating that gives this chia-based beverages a distinctive texture.
- 1 frozen banana
- 2tbsp chia seeds
- 1.5c almond milk
- 1/2tsp vanilla extract
- If you like the texture of soaked chia seeds, soak yours in the almond milk in your blender for a bit.
- Add to the blender your frozen banana and vanilla extract. Blend.
- Add ice if it's not frozen enough for you. However, the frozen banana should add a nice frozen creaminess to it.
