Coconut Quinoa Granola Bars
Quinoa is the world’s most popular superfood. It is loaded with tons of protein which is used for growth and maintenance. Protein is also used for building muscle tissue and repairing damaged tissues. Quinoa is also high in fiber, much higher than most grains. Quinoa is also loaded with minerals and doesn’t contain any gluten.
Mixed with nuts & nut butters, oats, coconut, and dried berries, this granola bar is sure to give you energy, nutrients, and help rebuild your body. They are delicious and nutritious and you can get a lot of bars out of one batch, but trust me, they won't last long.
Makes about 15-20 Bars
1⁄2 cup cooked quinoa
1⁄4 cup uncooked quinoa
1 cup oats
1⁄2 cup unsweetened shredded coconut
1 cup nuts (pecans, walnuts, sunflower seeds, flaxseeds, pumpkin seeds, almonds), roughly to finely chopped depending on preference
1⁄4 cup raisins
1/4 cup dried cranberries
1/8 tsp salt
1⁄2 cup cashew or almond butter
1 Tblsp peanut butter
1/3 cup honey or agave, or less to taste
1 Tblsp coconut oil
Toast quinoa, oats, & coconut in 350 degrees oven for 8-10 minutes or until fragrant &
Add toasted quinoa mixture to a large bowl & add in cooked quinoa, nuts, & raisins; stir to combine well.
In a small sauce pan over medium heat, combine the salt, cashew/almond & peanut butter,
honey/agave, & coconut oil. Bring to a light simmer, stirring often, then remove from
heat & pour over dry ingredients. Stir until all ingredients are well combined & coated.
Layer a 9 x 9 baking dish with parchment paper (leaving enough at the edges to be able to remove finished bars); press mixture into dish until evenly distributed.
Bake at 350 degrees for 15-20 minutes. Remove from oven & allow granola bars to cool thoroughly (for approximately 1.5-2 hours) before removing from pan & cutting.
